Blueberry RecipesIf you're growing blueberry bushes, chances are you have your mind on one thing: delicious, fresh blueberries whenever you want them!

Not only are they tasty and nutritious, but growing your own blueberries means growing healthy fruit: you and your loved ones can enjoy them with confidence, without concern of pesticides or other dangers.

But no one wants to just eat handfuls of blueberries all the time, no matter how yummy or healthy they are! We all love variety in our diet, and there are so many ways to work these antioxidant rich berries into dishes you and your family will crave!

Let's start with breakfast! Who doesn't love a piping hot stack of blueberry pancakes in the morning? Well, you haven't had a truly delicious blueberry pancake until you've had them made from scratch with fresh, homegrown blueberries!

Blueberry Pancakes

  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 2 1/4 teaspoons baking powder
  • 3 tablespoons sugar
  • 3/4 teaspoon salt
  • 1 cup milk
  • 3 tablespoons butter, melted
  • 1 cup fresh blueberries!

 

In a small mixing bowl, beat egg whites until stiffened & set aside. In a separate mixing bowl, combine flour, baking powder, sugar and salt. Beat the egg yolks in a medium mixing bowl and add milk & butter. Stir egg mixture into the dry ingredients, and mix until batter is smooth. Stir in blueberries. Fold in the beaten egg whites. Cook using your preferred method -- griddle or frying pan. Makes 12 pancakes!
You can easily turn this recipe into blueberries waffles by simple pouring the batter into your waffle maker instead of a griddle!

Now, blueberry pancakes are certainly a popular dish, but did you know there are much more unique ways to use your homegrown blueberries? How about a delectable, fluffy blueberry bread pudding or a kid-friendly blueberry dessert pizza? Check out these awesome recipes and learn some new ways to use your berries:

Blueberry Bread Pudding

  • 3 cups milk
  • 3 large eggs
  • 5 to 6 cups day-old torn bread or rolls
  • 1 cup granulated sugar
  • 1/4 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest, optional
  • 2 cups fresh blueberries
  • 3 tablespoons powdered sugar

Heat oven to 350 and grease an 11 X 17 baking dish. Use a whisk to blend together milk, eggs, sugar, flavorings and zest. Add the bread and let stand for ten minutes. Toss blueberries in powdered sugar and stir into the bread mixture. Pour contents into prepared baking dish. Place the baking dish into oven and let bake for one hour, or until firm.

Blueberry Pizza

  • Crust:
  • 1 cup all-purpose flour
  • 1/4 cup confectioners' sugar
  • 1/2 cup melted butter.
  • Topping:
  • 1 package (8 oz) cream cheese
  • 1 can (14 oz) sweetened condensed milk
  • 1/3 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/2 cup water
  • 4 cups blueberries
  • whipped topping

 

In a mixing bowl, combine flour and confectioner's sugar. Add the melted butter and mix well until blended. Knead dough out onto a 14" pizza pan. Bake at 350 for 10 minutes, or until slightly browned.
In a separate bowl, beat cream cheese with sweetened milk, lemon juice, and vanilla. Spread evenly over the cooled pizza crust. In a large saucepan, mix sugar and cornstarch then stir in water. Cook, stirring occasionally, over medium heat until it begins to thicken. Add the blueberries and allow to cool. Spread cooled blueberry mixture over the layer of cream cheese. Chill. Cut into wedges and serve with whipped topping.

These new and exciting dishes are a great way to mix things up while using your fresh blueberries! But for those of you who like a little more tradition, here is a fabulous recipe for delicious blueberry pie!

Blueberry Pie

  • 1 homemade or purchased 9-inch crumb pie crust
  • 6 cups fresh blueberries
  • 1/4 cup sugar
  • 2 tbsps water
  • 2 tbsps cornstarch
  • 1/4 cup cold water
  • 1 tbsp butter
  • 1 tbsp lemon juice
  • whipped topping

 

Combine 2 cups of berries, sugar and 2 tablespoons water in a large saucepan and bring to a full boil. Dissolve cornstarch in 1/4 cups cold water and add to blueberry mixture. Return to a boil, stirring often. Reduce heat to low and cook, stirring often, for two minutes. Remove from heat. Stir in the butter, lemon juice, and final 4 cups of blueberries. Spoon into crust and let stand for three hours or until set. Serve with whipped cream.

Perhaps the simplest and most versatile way to use your homegrown blueberries is in a blueberry sauce, ideal for topping cheesecakes, ice cream, and pound cake! This is a recipe we love that we're sure you'll use time and time again:

Blueberry Sauce

  • 2 cups fresh blueberries
  • 1/3 cup sugar
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

 

Wash and crush blueberries; add sugar, lemon juice and salt. Mix well. In a small saucepan, bring blueberry mixture to a boil; boil 1 minute. Add vanilla. Chill. Crush blueberries thoroughly. Add sugar, lemon juice, and salt. Mix well. In a saucepan, bring blueberry mixture to a boil and allow to boil for one minute. Add vanilla and allow to chill.
